Blake’s Guide For How to Cook Steak Perfectly
Ingredients
- steaks
- olive oil
- salt and pepper
Instructions
- Set out the steaks at room temperature, brush with olive oil, and season with salt and pepper. Let sit for 30 minutes.
- Preheat oven to 200ºF
- Place steaks on a cookie cooling rack and set rack on top of a baking sheet. This allows the steak to cook while having minimal contact with the hot surface of a pan.
- Cook steaks until internal temperature is at 120ºF (45 minutes to an hour). Check the temperature as you go.
- While steaks are cooking, prepare fire (if cooking over a live fire) or grill.
- Place cast iron pan on fire to get it nice and hot.
- Remove steaks from the oven and let rest for 10 minutes.
- Give steaks a quick basting with butter and place on the cast iron skillet.
- Sear in skillet for about a minute on each side until internal temperature reaches 135º (medium rare).
- Remove, sprinkle with sea salt flakes, slice, and serve.
