Lately, I’ve been trying out a more intuitive approach to eating—basically trying to listen to what my body really wants to eat, instead of planning my meals purely for health or convenience reasons. Of course, this also requires tuning in to my body’s hungry and full signals, and following suit in order to eat what I want and still feel my best. Turns out, there’s one thing that my body pretty much always wants to eat on Sunday nights, and it’s this ultimate avocado toast topped with roasted tomatoes and a soft-boiled egg.

And it doesn’t hurt that it’s an incredibly easy dinner solution that takes about five minutes start to finish.

Picture this: the weekend’s coming to a close, you’re doing your best to ward off the Sunday scaries with a hot bath or whatever self-care floats your boat, and you’ve got a new episode of True Detective queued up. (Y’all, Homeland is coming back soon… also Season 2 of Big Little Lies!! But I digress…) Can you think of anything more comforting to finish it off with than warm toast topped with all the best things? I can’t.

Of course, the fact that I usually have all the necessary ingredients on hand for these definitely helps me resist the siren song of takeout delivery. And I’ll bet that you can actually make these faster than it would take to look up the online menu and put in your order.

They may look basic at first glance, but there are a couple elements here that take these toasts to the next-level. First: you’ve got to get your eggs just right. I prefer an 8-minute egg that results in a jammy yolk that’s not too runny.

Here’s how to make my perfect egg:

Bring the water in a saucepan to a boil, drop in your egg(s), and set a timer for 8 minutes. Immediately take out the egg, plunge into ice water until it cools down, then peel it while running the egg under hot water to bring it back to room temp. We’re talking egg perfection.

The next avocado toast upgrade is these blistered tomatoes. To make them, just toss your cherry tomatoes around in a hot skillet for a few minutes until they start to burst. Sure you could also do these with raw tomatoes, but why? These are so much better and form almost a sauce that flavors the entire toast.

And finally, don’t miss that Everything Spice sprinkle that adds the perfect garlick-y onion-y spice! I love my Trader Joe’s brand, but you can use any of the Everything Spice blends that many stores carry now.

Sunday Night Avocado Toast with a Jammy Egg

Sunday Night Avocado Toast

Ingredients

  • 4 slices seeded bread (I love Dave's Killer Bread 21 Grains & Seeds Thin Sliced - bonus points that it only has 60 calories per slice and is packed with fiber and protein)
  • 1 avocado
  • 12 (or so) cherry tomatoes, halved
  • 2 soft or medium-boiled eggs (see the post for how I make mine)
  • toppings: Everything Spice (I like this one), fresh cilantro, sriracha, lime wedges

Instructions

  1. Toast the bread either in a toaster or under the broiler.
  2. Peel the avocado, remove the pit, and slice.
  3. Heat a small sauté pan to high, then toss your cherry tomatoes around in it until they start to get soft. Season with a pinch of salt and set aside.
  4. Top your toast with avocado slices and give them a little smash. Peel your eggs then thinly slice on top of the toast.
  5. Top with cherry tomatoes, Everything Spice, fresh cilantro, and sriracha or hot sauce of choice. Sprinkle with a little sea salt, slice in half and eat. Don't forget extra napkins!

    Thank you for this recipe! I made it for my teenage granddaughter as an after- school snack, and she ate (inhaled) BOTH servings. Told me I was a good cook. YESSSS!!!
