Sorry guys, but for today’s edition of Bottoms Up, we’re keeping it clean with a recipe that involves no last-minute “spikes” of vodka or “top-offs” of bubbly. This one involves kale, peaches and coconut water, and I swear: it’ll leave you feeling better than any 5 o’clock cocktail (okay, that might be stretching things a bit…but I’m on a health kick, remember?) Last weekend, after an indulgent breakfast that may or may not have included eggs, sausage and croissants, we were definitely feeling the need for a light lunch with a hefty dose of “green.” Off to Juiceland we went, and after discovering my new favorite smoothie ever, I’ve been making a similar version for breakfast every morning. On a side note: do you think it’s a coincidence that my habit started right when swimsuit shopping season is upon us? It may or may not have something to do with it, but either way, it’s an incredibly energizing way to start the morning. Keep reading for the recipe…
Kale, Peach & Coconut Smoothie
*makes 2 smoothies
Ingredients:
- 1 cup frozen unsweetened peach slices (if you use fresh peaches, just add a couple ice cubes)
- 1 cup packed kale, torn into pieces and stems discarded
- 1/2 frozen banana
- 3/4 cup coconut water (may need a little more or less, depending
- 1/2 teaspoon freshly grated ginger
- 1 teaspoon raw honey
- (you could also add a big scoop of greek yogurt or a glug of almond milk for added creaminess)
Instructions:
- Combine all ingredients in a blender.
- Blend on high until very smooth. Pour into 2 glasses; serve with straws.

My husband and I try to live about an 80% paleo lifestyle, and I have been trying to find a good green smoothie than doesn’t give you a weird aftertaste…I’ll have to try this one! I haven’t seen peaches used before, I bet that makes all the difference!
Sounds like a great combo with the peaches! But every time I buy kale I wind up throwing some out because it comes in such a big bunch. I’m thinking of freezing it next time. Have you ever tried doing this? Thanks!
Kale freezes well and makes for a frozen concoction. You won’t need to add any ice cubes with frozen kale.
Completely agree – if you can use frozen kale or spinach in this, it makes for an even more intense burst of green without the need for added ice cubes that can water it down. So yes, go for it!
I can’t eat bananas. Do you think it would be OK to leave it out, replace it with more peaches or something else?
Absolutely! I’d add a bit more peaches, and if you eat dairy, a scoop of plain yogurt will add the extra touch of creaminess that the banana provides.

Yes, Kathleen freeze all of your unused vegetables they will keep a lot longer and save you more money plus I like the extra ice they put in your drink. I freeze my spinach my ginger and all my berries.
I always use peaches and I add seedless grapes – they add a bit of sweetness and a great texture. That way you can eliminate the honey. I add milled flax seed and milled chia seeds and if I want to increase the protein I add some soy protein powder.
mmm I am also a recent Kale addict! I love that smoothie with kale, peach and apple at Juice Land so I will definitely have to try the one you posted above! I have been ordering cucumber, apple, kale and spinach at Whole Foods and making it at home and it is delicious! Adding cucumber makes it so refreshing!

I make a vitamin packed green smoothie that has spinach, cucumber, banana, pineapple, lime, and mint. I grind up a little flax seed and add that too for fiber. It’s delish & makes you feel so good afterwards! Love these other ideas too!

I use spinach, cucumber, banana, flaxseed, dark chocolate . and unsweetened almondmill, and papaya. I add some protein powder to cover all my vitamins and protein and it tastes awesome! I drink one every day instead of taking vitamins

Usually if I have this, a mid-morning latté is the only other thing that makes up my breakfast… and it’s amazing how much energy it gives me! A scoop of greek yogurt gives a little extra protein kick that helps me stay full.
i love the idea of the coconut water base instead of milk/yogurt! 🙂 does the ginger give a lot of kick?
What type of kale is that in the picture? I am used to kale leaves being much bigger. Thanks!
It’s actually baby kale! My supermarket sells it in prewashed boxes so it’s really convenient. And the baby kale has a more tender/less bitter taste than the other versions. But you can get the same effect in this recipe with really any variety of kale, or for that matter, other greens like spinach or arugula.

I have made this every morning since reading this recipe! I love it so much but since I couldn’t find frozen peaches at Trader Joes I’ve been using frozen mango which is so delicious.

Funny I made a frozen peach/banana/kale (fresh from my garden…it’s super easy to grow) with a 1/2 tsp of real vanilla, cinnamon and cayenne(dash).
It was REALLY good! I’ll do it again soon.
Tried this today. Great idea! I used only fresh ingredients. Was awesome.
Ended up using 2x Kale and only cracked open one coconut so was 1/2cup yield.
Used half a ripe banana and a tbsp of ginger.
As for my peaches, it wasn’t very juicy so I added 8 cubes of ice.
It came out so good that I couldn’t stop smiling haha
I am obsessed with this smoothie! I add one tablespoon I coconut butter so come good healthy fat!:) delicious!
